If stored properly, the texture and taste of bamboo shoots will not change much.
If you want to eat bamboo shoots in the future, you only need to soak the dried bamboo shoots in water for an hour in advance. After soaking, it can be fried, stir-fried, or stewed, and the taste is almost the same as fresh.
